Phospholipids can help food look brilliant

Pigments are sometimes heavier than other components of a food or drink product, separating from it and settling at the bottom of the prepared food. Without adding undesired taste, it is possible to “wrap” pigments in a nano-emulsion made with phospholipids, stabilizing them throughout the ready finished product.
