Some valuable food ingredients may not be very stable when used in combination with other – somewhat aggressive – substances. For protecting these ingredients against oxidation or digestion, phospholipids offer inclusion into liposomes (very small vesicles). Both hydrophilic and lipophilic ingredients can be sheathed by them.
